In this short Doc the owner of a local kansas City restaurant talks ups and downs of owning a small business. Carlos Mortera, owner and chef, doesn't shy away from his Mexican heritage. It's cooked right into every item at his sandwich shop, right down to the bread: bolillo baguettes, similar to the loaves popular on the Yucatan peninsula. Sandwich fixings such as chicken carnitas, house made soy chorizo, and sriracha crema also pay homage to Mexican cuisine, as do the house made tamales. Guests can also opt for crab-cake sandwiches with seaweed slaw, or Elvis-worthy creations stuffed with banana, peanut butter, prosciutto, and Nutella the King's four favorite hair products.
